Outcask Rum is an Australian made rum and the first ,in a very long time, to make its way out of the Blue Mountains/Hawkesbury regions. It begins with sticky sweet NSW molasses that's fermented for 2 weeks, then distilled in our copper pot still, Calcifer, and aged in ex-Australian whiskey barrels for 2-3 years.
Outcask Rum boasts notes of crisp green apple, mild banana, pineapple, candied brown sugar and hints of creaminess from the first nose. The palate follows through with crème brulée, sultana, honey, baked goods and crystallized sugar, leaving you wanting more.
The gorgeous golden liquid from these barrels has made it through fires, floods and the challenges life throws in the way of a young business. Through this aged expression from Karu Distillery we want to share with you a new spirit type that is made with the same passion for the art and science of distillation that we are known for.
