The Aisling Distillery | Griffith NSW
“This Single Malt Whisky “Tale of the Oak” is the 2nd Edition to the Royalty Edition this is where two become one. The Queen’s path meets the King’s Journey. Just as the tale behind the Release. Casks were laid down from November 2016. It has been aged in 3 x 225 litre, uncharred casks. In 1998 they had Semillon Botrytis aging for a few years and then were finished with Tawny for 10 years. Consists of Cask Number 63,64 & 65. Decanted in April 2021 at 47% Alc it is a numbered release. With an initial limited release of 400 bottles.
Colour: Is golden in colour with intense honeysuckle and floral aromas, aged in uncharred Riverina Casks from a locally sourced Riverina Winery for just over 4 years, it contains natural colouring and flavouring from the casks with a rich fulfilling flavoursome palate finish.
Nose: When you raise your nose into a glass of our Single Malt Whisky, that highlights the famous bold spirit style against the signature lemon, apple, stone fruit, white florals and bees wax aromas, slightly savoury back drop of sweet fruit, made up from plum jam, red grapes, orange marmalade and more berries, honey suckle and floral notes, shrouded by slightly earthy tones and a small amount of spice, perfectly compliment the cleanliness of the double distilled spirit. Allowing the spirit to sit and breathe before you indulge into your first sip.
Palate: In order to maximise your palate, hold the first sip in your mouth, then you will really appreciate on the next sip, look out for sweet, white florals and Suttle Semillon and Tawny tones with a full body. After the taste comes the finish & the length. This is the after taste that follows well after you’ve swallowed.
Pairing: with a variety of dishes seared scallops, shrimp and other richer seafood dishes work beautifully.
“Best shared with the one’s we love, where memories are made.”
